 Thukpa is Tibetan noodle soup which is quite famous in North Eastern India , Darjeeling and Nepal . It gives an irresistible combo taste of garlic,ginger, turmeric which are also good for health. There are veg thukpas,pork thukpas, chicken thukpas and many more . Hot Soups are always good for cold seasons so why not try a thukpa soup.

Ingredients
◾1 cup noodles
◾200g chicken breast
◾¼ cup chopped cabbage
◾ 2 chopped onions
◾¼ cup carrot cut lengthwise
◾3-4 cloves of garlic
◾½ inch chopped ginger
◾½ cup chopped fresh coriander
◾2tsbp soy sauce
◾4-5 cups of water
◾2tsbp oil
◾½tsbp Black pepper powder
◾Salt to taste


 Method

1. Boil the noodles. Drain the water, refresh in cold water and drain again, keep aside.

2. Prepare the chicken stock with one onion and 2 cloves of garlic. Removed the chicken from the stock and shred. The stock is ready.

3. Blend the other onion, garlic cloves, ginger, coriander. Add the Black pepper powder and salt and process until combine. The spice paste is ready.

4. Heat the oil in a pan, add the spice paste and cook until it loses it's raw smell. Add the cabbage and carrots and cook it for 5 min over medium heat. Pour the stock, boil it for some time. Add salt and season to taste. 

5. Now let's assemble the Thukpa. For that put some noodles in a bowl, add the stock, shredded chicken and soy sauce. 

6. Garnish it with coriander leaves. 

Thukpa is ready to be served....
